Oven roasted cocktail tomatoes with Burrata

Ingredients

  • 2 punnets cocktail tomatoes
  • 150g burrata cheese
  • 2tbs balsamic vinegar
  • 3tbs extra virgin olive oil plus extra for drizzling
  • 1tsp sea salt flakes
  • 1tbs mixed Italian dried herbs
  • 2 sprigs of rosemary
  • Salt and pepper to season
  • 1 baguette cut into slices

Method

Preheat oven 220c. In a shallow baking tray add the tomatoes with the vine intact and add olive oil, balsamic vinegar and herbs. Bake for 5min on high then turn down to 155c for a further 20 to 25min until the tomatoes are soft and have blistered. Leave to cool for 5min and add the burrata – season with fresh ground pepper and salt to taste. Cut into burrata and serve with crusty baguette slices

Why not add some chopped chorizo into the baking tray when roasting the tomatoes
