Italian style ciabatta sandwich

Ingredients

  • 2 truss tomatoes, sliced
  • 4 bocconcini balls
  • 4tbs of pesto of your choice
  • Handful of basil leaves
  • 2 Ciabatta rolls

Method

Cut your ciabatta roll in half and spread the pesto on the base, tear up the bocconcini and place on top of the pesto, then add the basil leaves. Top with slices of truss tomato and season to taste. Repeat with second roll and serve
